2 large shallots
1/4 C white wine
1 C orange juice (reduced by boiling to 2 tblsp)
1/2 stick butter (cut into bits)
2 Tblsp plain yogurt
2 Tblsp cream
1/4 tsp Tabasco

Directions:
Directions:
In heavy sauce pan heat the shallots, wine, reduced juice together until further reduced to 2 tblsp. Gradually whisk in butter stirring well after each addition. Remove from heat and stir in yogurt, cream and Tobasco. Serve over warm crab cakes...yum!
