1 1/2 C water
1/2 C uncooked wild rice
1 pound Dungeness crab meat (drained)
3/4 C dry bread crumbs
1/2 C finely chopped red bell pepper
1/4 C minced shallots
1/4 C light mayo
2 Tblsp Dijon mustard 1 1/2 Tblsp lemon juice
1/2 tsp salt
1/2 tsp ground cumin
1/8 tsp ground red pepper
1/8 tsp black pepper
2 large egg whites(beaten lightly)
4 tsps olive oil (divided)

Directions:
Bring water to boil in a medium saucepan. Add wild rice, cover,reduce heat and simmer one hour or until tender. Combine cooked rice, crab, and next 11 ingredients (bread crumbs through egg whites) in a large bowl. Divide the mixture into 8 equal portions shaping each into a 1 inch thich patty. Heat 2 tsps oil in a large heavy skillet over medium heat. Add 4 of the patties and cook for 4 minutes on each side or until toasty brown. Turn only once. Repeat with remaining oil and the other 4 patties. Serve with favorite tartar or aoli sauce or good mustard.
