Ingredients: 1 lb. Shrimp deveined and washed 2 cans Del Monte stewed tomatoes 1 c. green pepper, chopped 1 c.onion chopped medium 1 c. fresh mushrooms sliced 1/2 c.green olives sliced 1/2 c. white wine salt and pepper to taste hot sauce (optional) white or brown rice

Directions:Combine tomatoes, green pepper, onions, salt and ground pepper and wine in large sauce pan. Simmer for 5-10 minutes. Add sliced mushrooms and green olives. Bring just to a boil and then added shrimp and cook for 3 minutes or until the shrimp turn pink. Serve on rice. |

Notes: This is a great quick recipe. It is very tasty and can be used for lunch or dinner. My cousin Joy Krey and I put this recipe together from a few creole recipes we found it cookbooks. We had a blast doing it and enjoy the creole and the memories.
