2 T of olive oil or margarine
2 large onions (sliced)
2 stalks of celery (chopped)
1 large potato (sliced)
2 zuccini (sliced)
1 carrot (chopped)
5 cups of vegetable/chicken broth
salt and pepper according to taste
a bunch of fresh parsley or cilantro

Directions:
Directions:
Begin by sauteing onions and celery in oil until soft.

Add the rest of the ingredients,cover and cook over low light for about 30 minutes or until all vegetables have softened.

Puree with hand blender.
