2 20 ounce cans of pineapple chunks in juice (reserve juice)
2 cups of sharp cheddar cheese (can use 2% cheese) – shredded and divided
6 Tablespoons of flour
6 Tablespoons of pineapple juice
1 cup of sugar (may use all or part Splenda sweetener)
30 (1 tube) Ritz crackers (regular or reduced fat) – crushed
1 stick butter or margarine (may use light spread like Smart Balance) – melted

Directions:
Directions:
Drain pineapple, reserving juice. Mix pineapple with 1 cup cheese, flour, sugar or Splenda and juice in 2 quart casserole dish. Combine crushed Ritz and melted butter/spread. Top casserole with this. Sprinkle remaining cup of shredded cheese on top. Bake uncovered at 350 degrees for 30 minutes.
