1/2 c olive oil
1 onion chopped
1 tbsp garlic minced
1 35 oz can chopped tomatoes, drained
2 tbsp fresh basil chopped
2 c whipping cream
1/2 tsp salt
1/4 c olive oil
1 lb Italian Sausage, mild or hot
1 onion thinly sliced
1/2 lb mushrooms sliced
salt and pepper to taste
1/2 c beef broth
1 lb penne or mostaccioli pasta
1/2 lb sliced mozzarella cheese
3 oz parmesan cheese

Directions:
Saute onions and garlic in oil until soft. Add tomatoes and basil and stir well. Reduce heat and simmer for 30 min. Puree in food processor. Return to skillet over low heat. Add cream and salt and pepper. (Sauce can be made 2 days ahead at this point)
Heat 1/4 cup oil in heavy pan over med high heat.Add crumbled sausage and cook stirring until lightly brown and done. Add onions and cook until soft. Add mushrooms and beef broth and stir well. Cook about 5 min until most of the liquid is evaporated. Season to taste with salt and pepper.
Cook pasta in salted water until done. Drain.
Grease a 3-4 qt baking dish. Layer pasta, sausage and tomato sauce. Arrange mozzarella on top. Sprinkle with parmesan. Bake 350º covered for 30 minutes. Remove lid and continue baking 15 more minutes until cheese is melted.
