Potato Latkes (Pancakes) Recipe

4 large potatoes, peeled and grated
1 small onion, grated
2 large eggs
1/4 tsp. baking powder
1/2 c. flour
1 tsp. salt
1/8 tsp. black pepper

Directions:
Directions:
Mix all of the ingredients. Let rest in a collander sitting over a bowl while the liquids drain off. Carefully dispose of the drained liquid leaving the "starch" for reuse. Mix the starch back into the potato mixture. Drop by small spoonfuls into hot oil. Fry until brown (only fry a few at a time to keep the oil fresh).

Best served with applesauce or ketchup. I made this only once a year and my kids ate every crumb. hot).
