5 oz Yeast
2 1/2 cups Water
2 1/2 quarts Milk
5 cups Sugar
20 Eggs
4 cups Shortening
16 quarts Flour
10 cups Mashed Potatoes
10 tsp Salt

Directions:
Directions:
Dissolve yeast in part of the water, heated. Mix sugar and shortening until smooth, add to the yeast. Beat eggs and mix in, add mashed potatoes, mixing until smooth. Add flour and salt. Gradually add flour and other fluids until a dough is made. Should be refrigerated until used. Take out of refrigerator, enough dough for rolls or loaf. Grease pan/pans, make rolls as you would biscuits. Cover pan for 2-3 hours to rise. Cook in 325º oven until brown as you like. This dough will keep indefinitely if covered in refrigerator.

This recipe was given to me by a chef who made rolls for a large café.
Suggestion: Give all the neighbors and family a piece of dough - there will still be enough left!
