1 C. dried black mushrooms
1 clove (small) garlic
1 small piece ginger
2 T. soy sauce
1 bay leaf ¼ tsp tarragon
2 T butter
1 qu chicken or beef stock
2 pepper corns ¼ tsp marjoram
1 T chopped parsley

Directions:
Soak mushrooms in 1 qu. Warm water 15 minutes or more. Drain and chop very fine. Save water. Sauté garlic in butter a few seconds. Remove. Sauté mushrooms in same pan 5 minutes. Add mushroom water and bring to boil. Add seasonings, garlic and mushrooms> simmer about 3 hours then strain
