2 1/2 c cubed chicken
1 egg , beaten
1/4 c plus 2 tbsp cornstarch
1 can (13 oz) pineapple chunks (reserve liquid)
1/2 c sugar
1 med pepper (red or green) cut in chunks
1 lb carrots sliced thick
1/2 c cider vinegar
soy sauce
3 cups cooked rice

Directions:

Toss chicken with egg until coated. Sprinkle with cornstarch. Cook chicken over medium heat until brown and done. Set aside.
Add water to pineapple juice to make 1 c. Add to pan with vinegar and sugar. Bring to a boil stirring constantly. Reduce heat to med. Add peppers and carrots and cook till almost done.
Blend 1/4 c water with 2 tbsp cornstarch and stir into pan, heating to boiling. Boil 1 min until thickened. Add pineapple, chicken, and heat thru.
Add soysauce to taste; Serve over rice.
