2 1/2 lbs. new potatoes
1 /2 red bell pepper
1/2 sweet onion (Vidalia or Walla Walla), chopped
1 stalk celery and a few celery greens, chopped
1 (4.5-oz.) can chopped or sliced black olives, drained
1 (6.5-oz.) jar marinated artichoke hearts, drained and cut into chunks

Dressing:
3/4 cup Newman's Own Caesar Salad Dressing
1/4 cup mayonnaise
4 tsp. fresh lemon juice

Directions:
Directions:
Boil unpeeled potatoes in salted water until tender when pierced with a sharp knife, about 20 minutes. Then drain and cool. Cut potatoes into large cubes. Combine potatoes, red bell pepper, onion, celery, black olives and artichoke hearts in large bowl.

In medium bowl, mix dressing ingredients together. Add dressing to potato mixture. Toss gently to coat. Cover and refrigerate if not serving immediately.
