2 T Butter- melted
2 T cocoa
1/4 c butter (cut into pieces)
3 (Oz) bars of chocolate- chopped
1/2 c Half and Half
1 1/4 c egg substitute
3/4 c sugar
2/3 c flour

Brush 16 muffin pans with 2 T melted butter and sift evenly with cocoa. You can use individual buttered ramekins and skip this step.

Place butter and chocolate in microwave for 30 secs. Repeat until soft, stir. Slowly stir in half and half and micro wave 30 sec more.

Combine egg substitute and sugar in a large mixing bowl. Beat at medium speed for 5-7 min. or until slightly thickened. Add chocolate cream mixture and flour beating until blended. Pour batter into muffin cups to within 1/4 inch from top. Cover and chill for at least one hour or up to 24 hours.

Bake at 450 º for 10-11 min or just until edges of cakes spring back when lightly touched, but centers are still soft. Let stand 3 min before loosening edges with a knife. Quickly invert muffin pan onto cookie sheet. Transfer onto dessert dish using spatula.
Sprinkle with powdered sugar or serve warm with vanilla ice cream or Whipped cream.
