2 grilled lemon-garlic chicken breasts halves(cut into thin strips), 6 c. chicken broth, divided, 1 c. uncooked long grain rice, 1/4 c. lemon juice, 1/4 c. chopped fresh mint, salt and pepper to taste.

Directions:
Bring 2c. chicken broth to a boil in a large saucepan. Add rice; reduce heat to low and cook, covered 15 min. or until liquid has been absorbed. Stir in 4c broth and lemon juice. Bring to a boil over high heat. Stir in chicken strips and mint. Salt and pepper to taste.
