1 pound lean ground pork (or beef or turkey)
1 onion
1 bell pepper
garlic to taste
1 can rotel
1 can black beans drained
1 can whole kernel corn drained
1 tub sour cream
1 package Mexican cheese shredded
1 package flour tortillas

Directions:
Directions:
Brown meat, onion bell pepper and garlic in skillet. Stir in beans, rotel and corn until mixture is blended together. Layer baking dish (pampered chef pottery best) with tortillias, meat mixture, cheese and repeat until all of ingredients are used. Final layer is cheese. Bake in oven or nuke in microwave until bubbly. Place dollops of sour cream on individual servings.

This one will get rave reviews and have your guests doing the macarana! Great for pot luck gatherings. This is also one of those dishes that is better as a leftover once all the ingredients marry overnight in the fridge!
