6 – 8 cups of cooked, white sticky rice

1 lb. of bacon, cut into small pieces and then fried and drained (save the bacon grease)

8 oz. of fresh mushrooms, chopped fine and then cooked in a little of the bacon grease

8 oz. salad shrimp, drained then browned in a little of the bacon grease

4-6 green onions, chopped

4 eggs, scrambled

Directions:

Pour ˝ of the remaining bacon grease into a large frying pan. When hot, add all of the ingredients and fry until heated through.

Add salt and a generous amount of black pepper.

Serve.



This is a delicious rice dish – somewhat similar to Chinese fried rice – but distinct in that it doesn’t have any Soy Sauce and in the fact that it has a lot of black pepper – thus making it taste more Southern than Chinese.
