1 large onion diced
2 medium carrotts diced or chunky
2 large potatoes peeled and chopped
1lb of stew beef
1 package of sliced baby bella mushrooms
2 stalks of chopped celery
1/4 cup of barley
(you can add or delete any other veggies you want)
1 clove of minced garlic
5 cups of beef stock
salt, pepper
(Wondra for thickening the gravy at the end)

Directions:
Directions:
I put the beef on the bottom and swirl some olive oil over the top. I then sprinkle kosher salt and fresh ground pepper. Then add all veggies and pour in broth. Cook on low for 8 hours.

When cooked you can stir in some wondra to thicken up the broth and add any additional salt and pepper desired.
