3 lbs russet potatoes
2 tbsp olive oil
2 anaheim chilis, fresh, seeded and chopped
1 red pepper seeded and finely chopped
1 lge onion chopped fine
1 tsp chili powder
1 tsp cumin
1 tsp oregano
2 tsp salt
3/4 cup buttermilk
1 1/2 c canned or fresh corn off the cob
1/2 c cilantro chopped

Directions:
Directions:
Prepare and cook potatoes for mashing. While potatoes are cooking, heat oil in saute pan; cook chilis, peppers, onion, chili powder, cumin and oregano until tender. Drain cooked potatoes, add chili mixture with salt and buttermilk. Mash well. Add corn and cilantro and mix well.
