Sauce:
2 Tbsp creamy peanut butter
2 Tbsp vinegar
2 Tbsp soy sauce
1 Tbsp brown sugar
1 tsp garlic powder
1/8 tsp ginger
1/8 tsp red pepper

Stir-Fry:
4 chicken breasts
Olive oil
1 can water chestnuts
1 onion, chopped
2 bell peppers (red, orange or yellow), chopped

Directions:
Directions:
In a large mixing bowl combine all sauce ingredients. Set aside.
Chop the chicken and cook with olive oil a large wok or skillet until done.
Add peppers and onions to skillet, cook 5 minutes more.
Add Thai sauce and water chestnuts to skillet, heat over medium until sauce is absorbed, approximately 10-15 minutes.
Substitute any combination of veggies.
