1 cup flour
1 cup yellow cornmeal
1/4 cup sugar
1 Tablespoon baking powder
1/2 teaspoon salt
2 eggs, slightly beaten
2/3 cup applesauce
1/2 cup milk
1/4 cup cooking oil
1 large apple, peeled and finely chopped

Directions:
Directions:
Stir together the flour, cornmeal, sugar, baking powder and salt. Set aside. Combine eggs, applesauce, milk and oil. Stir into dry ingredients just until moistened. Fold in apples. Spoon into greased muffin pan.
Bake at 425 degrees for 15-20 minutes (remove from oven while they still seem moist)
