1 large (3 lb.) chicken
1 pkg. flour tortillas
1 can cream of mushroom soup
1 can cream of chicken soup
1 onion, chopped
1/2 bell pepper, chopped
3 c. grated Mexican blend cheese
1 can Rotel tomatoes with green chilies (mild)

Directions:
Directions:
Boil chicken until it falls off the bone. Cut up tortillas and soak for a few minutes in chicken broth. Saute' onion and bell pepper in butter. Mix with soups and tomatoes together. Place layers of tortillas, chicken, tomato mixture, and cheese. Repeat layers and top with cheese. Bake at 350ºF until cheese bubbles.
