2 cups raw wild rice
4 cups water
2 tsp. salt
2 lb. ground beef
1 lb. fresh mushrooms
1/2 c. chopped celery
1 c. chopped onion
1/2 c. butter
1/4 c. soy sauce
2 c. sour cream
2 tsp. salt
1/4 tsp. pepper
1/2 c. slivered almonds, optional

Directions:
Gently cook wild rice, water and salt for 45 minutes. Drain if necessary. Brown ground beef (If beef is too lean, add more butter). Rinse mushrooms and cut off stems. Slice and saute mushrooms, onions and celery in butter for 5-10 minutes. Combine soy sauce, sour cream, salt and pepper. Add cooked wild rice, ground beef, mushrooms, onion and celery mixture and almonds. Toss lightly. Place rice mixture in a slightly buttered 3 qt. casserole. Bake at 350º for 1 hour, uncovered. Add more water if needed during cooking and season to taste. Stir several times during baking. Garnish with almonds.

This is especially nice served in a black wrought iron cooking kettle. Garnish with sprigs of parsley or pimento and serve piping hot.
