Butter

6 tbsp. butter, softened
2 tbsp. grated Key lime peel ( from about 6 limes )
1 tbsp. chopped cilantro
1 tbsp. Key lime juice
1 to 2 tsp. minced seeded jalapeno chile

Salmon

6 ( 6-oz.) salmon fillets ( 1 inch thick )
1/2 tsp. salt
1/4 tsp. freshly ground pepper

Directions:

1. Heat grill. In small bowl, stir together all butter ingredients.

2. Sprinkle salmon with salt and pepper. Place on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals; cover grill. Grill 7 to 10 minutes or until salmon just begins to flake. Serve salmon topped with butter.
