3 T. butter
1 medium onion, chopped
2 lbs. ground beef
2 cans beef consomme
2 cans water
5 large carrots
4 celery tops, chopped
2 cups celery, chopped
parsley, to taste
10 peppercorns, in a spice ball
1 T. salt
3/4 c. med.pearled barley
1 1/2 tsp. thyme

Directions:
Brown and drain ground beef and crumble. Saute onion in butter. Put beef and onion in a large kettle and add all other ingredients. Bring to a small boil. Reduce heat and simmer 1 hour or more. NOTE: keep extra liquids on hand such as V-8 juice, beef broth or more consomme as the barley tends to absorb a lot of the liquid. Add more liquid as the soup cooks to suit your taste.
