3 medium to large onions (slice onions as you would to make onion rings, but cut in half again to resemble “half moon” pieces)
1/2 block of butter or margarine
2 cans of Campbell’s Beef Consommé soup
2 cans Campbell’s Beef Broth soup
1 can of mushrooms (Stems and Pieces) - Optional
Shredded Mozzarella cheese and croutons

Directions:
Directions:
In medium stock pot and on medium heat, melt butter or margarine and add onions. Sauté onions for 5 minutes. Add cans of consommé, broth, and mushrooms and bring to boil. Cook mixture on medium to high heat until onions are very tender (approximately 45 minutes to 1 hour). Season to taste. Serve hot and garnish with shredded mozzarella cheese and croutons.
