2 lbs. headless shrimp or two (12 oz.) pkgs. of crawfish
1 pkg. fettuccine noodles
4 oz. shredded Romano cheese
16 oz. half and half
1 medium onion
1 can original diced Rotel tomatoes
1 stick butter
1 bunch green onions
salt and black pepper

Directions:
Directions:
In one pot, begin cooking the noodles. In another pot, sauté the onion and Rotel in butter. Add shrimp, stir until cooked. Reduce heat. Pour in the half and half, heat but do not let boil. Stir in cooked noodles, cut heat to minimum. Add seasoning. Stir in Romano cheese. Turn off heat. Stir until cheese is melted then add green onions. Cover and check in five minutes for dryness and add water. Check again in five or ten minutes and add water if needed.
