2 lbs. navy pea beans
2 cans original diced Rotel tomatoes
2 lbs. onions
1 lb. real smoked sausage or real Tasso
2 bunches of green onions
Salt and black pepper

Directions:
Directions:
Dump everything except the green onions into a pot and cook down. Stir often. Lots of stirring will make the gravy thicken without smashing beans. Add salt and pepper to taste. Add the green onions after beans are cooked.

Stirring often is good. However it can make you miss an LSU game winning homer in a national championship game. The replay didn't have the same effect. But the beans were good.
