5 lbs. white potatoes
3/4 c. butter
1/4 c. cream
1-1/2 c. flour

Directions:
Directions:
Peel and cut potatoes. Boil until tender. Drain nad rice the potatoes. Measure 7 c. of the riced potatoes into a bowl. Mix butter and cream with potatoes while hot. Cover bowl with a towel and allow to cool in the refrigerator overnight.

When ready to cook; Add flour to the potato mixture with your hands. Make egg sized balls and roll out on a floured surface. Cook on very hot griddle (450º - 500º) or lefse iron. When brown turn over with a lefse stick. While baking keep cooked lefse covered with a towel so they won't dry out.
