½ bottle of white cooking wine or left over drinking wine
1 large package of bone-in chicken breasts
½ onion sliced
1 8 oz. can of mushrooms, drained or small package of fresh sautéed
Salt and pepper
Parsley
½ stick of Margarine
Directions:
Directions:
Brown chicken in large fry pan. Remove from heat. Add mushrooms and onions and sauté until soft. Add chicken back into fry pan. Add ½ bottle of cooking wine and equal parts of water. Add salt and pepper.

Simmer for at least 35-40 minutes. Sprinkle with parsley. Serve over wide noodles.

This is a favorite of my family. I think Eric likes it as much as or more than chicken cutlets! I am glad because it is a lot healthier than cutlets, though we all love those, too.

My family learned this recipe from Aunt Frances Sardisco, my Uncle John Dimitri's sister. She stayed for a while with my mother and Aunt Mary and taught them how to make it, then they taught me. It is one of my regulars, and Eric's absolute favorite meal. Ken likes it, too!
