3 T finely minced yellow onions Dry Mixture
2 T butter 3 T fine dry bread crumbs
1 T olive oil 1/4 C Swiss Cheese
3 T shallot or green onions 1/4 C grated Parmesan
cheese
chopped fresh garlic to taste 1/2 tsp tarragon
12 to 16 large fresh mushrooms salt and pepper to taste
2-3 tb fresh whipping cream

Directions:
Directions:
Detach all stems and clean. Brush with melted butter, salt &
pepper, place hollow side up in a roasting pan. Sauté onions,
butter, olive oil, green onions, garlic and optional (sherry wine)
with minced stems from mushrooms.
Add sautéed and dry mixtures together and fill mushroom caps.
Before baking top with more Swiss cheese and butter.
