2 Large eggplant 4 -5 red, yellow, or orange bell
pepper
Marinara Sauce (See Cioppino)
Grated Parmesan or Romano cheese

Directions:
Directions:
Slice and peel eggplant. Soak 1/4 inch thick slices in salt
water for 10 - 15 minutes. Make marinara sauce. Pat dry with
paper towels and fry in hot live oil until golden brown and
tender. Drain on paper towels to absorb some of the oil.
Cut bell peppers in half, clean out the centers, then cut them
into quarters or smaller. Fry the bell pepper in hot live oil, and
drain on paper towels.
Assemble (some assembly is required!) Place eggplant on
slightly oiled 9 x 12, layer bell pepper, cover with marinara
sauce and sprinkle generously with cheese. Repeat layering
until 1/4 inch from top. Grate mozzarella cheese on top)
Bake 25-30 minutes
