2 C flour
1 tsp baking soda
1 C sugar
1 1/2 sticks butter
1 C persimmon pulp (approx. 3 persimmons)
1/2 tsp salt
2 Eggs well beaten
1 C hickory nuts (walnut OK)

Directions:
Directions:
Sift flour, salt, and soda. Cream sugar and butter then add eggs,
pulp and nuts. Mix together. Pour this into the flour mixture, stir
into stiff batter. Divide into 2 small loaf pans - lined with wax
paper. Bake 1 hour at 325?. Can use 1 large loaf pan.
