1-1/2 lbs. boneless b eef bottom round steak
2 medium carrots, cut into 1/2 inch pieces
2 stalks celery, cut into 1/2 inch pieces
1 C quartered fresh mushrooms
1/2 C sliced green onions
1 14-1/2 oz. can Italian stily stewed tomatoes
1 C beef broth
1/2 C dry red wine, white wine, or beef broth
3 T quick-cooking tapioca
1 tsp. dried Italian seasoning, crushed
1/2 tsp. salt
1/4 tsp. pepper
1 bay leaf
3 C hot cooked noodles

Trim fat from meat; cut meat into 1 inch cubes. Transfer beef to a 3-1/2 to 4 qt. slow cooker. Add carrots, celery, mushrooms, green onions, undrained tomatoes, beef broth, wine, tapioca, Italian seasoning, salt, pepper, and bay leaf. Cover; cook on low heat setting for 9-10 hours or on high heat setting for 4-1/2 to 5 hours. Discard bay leaf. Serve over hot cooked noodles.
