2 medium-size ripe tomatoes, sliced
8 oz. fresh mozzarella cheese or goat cheese, thinly sliced
6 large fresh basil leaves, finely chopped and divided
1/2 tsp. freshly ground pepper, divided
Tarragon Vinaigrette (elsewhere in this section)
1 medium cucumber, thinly sliced
1 sweet onion, thinly sliced

Layer tomato and cheese slices in a shallow dish; sprinkle with half of chopped basil and 1/4 tsp. pepper. Drizzle with 1/4 cup Tarragon Vinaigrette. Top with cucumber and onion slices; sprinkle with remaining half of chopped basil and 1/4 tsp pepper; drizzle with remaining 1/4 cup Tarragon Vinaigrette. Cover and chill 4 hours. Serve on a basil leaf-lined plate, if desired.
