1 lb. chicken
1 T. oil
1 onion - chunked
1 clove garlic
2 carrots sliced thinly
green pepper sliced thinly
red bell pepper sliced thinly
1 can pineapple chunks with juice
c. white vinegar
3 T. brown sugar
3 T. ketchup
3 T. soy sauce
1 T. cornstarch

Brown chicken. Add onion and garlic. Cover and cook 10 minutes. Add carrots and peppers. Combine remaining ingredients, stir into skillet. Cover and simmer for 10 minutes. Serve over rice.
