2 lbs baby potatoes, washed, diced large russet potatoes
4 tbs olive oil
8 cloves garlic, peeled and crushed
4 shallots, peeled and quartered
3 tbs minced fresh herbs (just about anything will do but rosemary is a winner)
Salt and pepper to taste

Directions:
Directions:
Preheat oven to 425. Place potatoes, garlic and shallots in baking dish. Drizzle with olive oil, then sprinkle herbs, salt and pepper on top. Mix with clean hands until every potato is evenly coated. Bake for approximately 1 hour, or until thickest slices are cooked through. Check and stir after 30 minutes to ensure even crisping. Salt and pepper to taste while they're hot!
