1/2 tsp pepper
1 cup all purpose flour
3 tbs olive oil
1 tbs butter
4 chicken breast filets
3 cups chicken broth
1 cup white wine
1 cup water
2 sprigs fresh rosemary
1 pint sliced mushrooms

Directions:

In a deep skillet, melt butter and add olive oil over medium heat. Mix flour, salt and pepper in a zip top bag. Coat each chicken breast in flour mixture by placing it in the bag, closing it, and giving it a good shake. Cook each breast in skillet until each side is crispy and golden, approx 5 minutes depending on the thickness. Remove chicken and set aside.
Deglaze pan by pouring in the chicken broth and water, then the wine. Add rosemary and mushrooms and cover, letting it "steep" for about 5 minutes. Add the chicken back into the pan, cover and cook over low heat approximately 20 minutes.

This is great with rice or roasted potatoes. The chicken can be cooked the night before, or even in a slow cooker once it's been crisped in the pan.
