1 pound carrots
1 medium onion
6 garlic cloves
1 piece fresh ginger
3 tablespoons oil
4 1/2 cups chicken stock
1 bay leaf
2 teaspoons grated fresh orange peel
1/2 cup fresh squeezed orange juice
salt and pepper to taste
parsley
sour cream or plain yogurt

Directions:
Directions:
Peel and thinly slice the carrots, finely chop the onion and garlic. Peel and thinly slice the ginger. Heat oil over medium heat and saute carrots, onions, garlic and ginger until the onion is golden (6-8 minutes). Add the chicken broth and bay leaf to the vegetables and cook for 20 minutes. Remove the bay leaf and puree the soup. Stir in the orange zest and juice. Season with salt and pepper. Serve garnished with the sour cream or yogurt and parsley
