1 orange
1 T olive oil
2 medium onions, sliced
6 garlic cloves, minced
1.5 Tbsp marjoram, dried
1.5 tsp cumin
3 cans whole tomatoes, drained
2 cups chicken broth
1.5 tsp salt (opt)

Directions:
Directions:
With vegetable peeler, remove orange rind into thin strips. Sautee with onions and garlic for 30 minutes. Add basil and next 3 ingredients, cook for 5 minutes. Add tomatoes and broth; bring to boil over high heat. cover, reduce and simmer for 20 minutes. Place about 1/3 of misture into blender. Process until smooth. Serve combined soup then with herbed yogurt (plain yogurt with your favorite fresh herbs) and parmesan toast points.

Seems like the first sauteeing time is long, but orange and onion/garlic need to meld. Enjoy!!
