6 large chicken drumsticks, 12 wings or whatever
2/3 cup regular long grain rics
1/2 lb Italian sausage or Spanish (hard) Choriso
2 tbsp oil
1 - 8 oz. can stewed tomatoes
1 medium size green pepper, cut in strips
1 small jar pimientos
1 small onion, sliced
1 clove garlic, diced
1/2 tsp salt
1/4 tsp ground pepper
1/2 cup frozen peas

If using Italian sausage, remove from casings. In hot oil cook sausage and chicken until brown, stirring sausage frequently to break it up. Spoon off all but 1 tbsp drippings from skillet. Add remaining ingredients with 1 cup water. Bring to boil, reduce heat to low, cover and simmer, stirring occasionally until chicken and rice are tender and liquid is absorbed, about 20 minutes. Gently stir in peas, heat through and serve.

Terrific! Throw in some shrimp, scallops, squid, etc. at the last minute for a more authentic Paella. Use Spanish Choriso if available. Serve with green salad.
