1 small apple, chopped
1/2c. bread crumbs
1/4 c. chopped celery
2T. raisins
2T. chopped walnuts
2T. sliced green onions
Dash nutmeg
2T. apple juice
3/4 lb. pork loin
1/2 c. apple juice
1-1/2tsp. corn starch
1/8tsp. ground cinnamon

For Filling: Stir together apple, bread crumbs, celery, raisins, walnuts, onions, nutmeg and 1T. apple juice.
Butterfly loin. Cover with plastic wrap and pound to 1/2" thickness. Spread filling over meat. Roll and tie to secure. Brush with 1T. apple juice.
Roast, uncovered for 1-1-1/4hours
For sauce: Simmer 1/2c. apple juice, cornstarch and cinnamon. Serve with roast.
