1 cup sugar
1/2 cup shortening
1/4 tsp salt
1 egg
1 tsp cinnamon
1 1/2 cup sifted flour
1/2 cup cold coffee or fruit juice
1 tsp soda dissolved in small amount of hot water
1 tsp vanilla
2 cups diced or chopped raw apples (unpeeled)

Mix together. Spread in loaf pan; sprinkle with brown sugar and nuts.
Bake 350 until done, about 40 minutes.
