1 cup whole wheat pastry flour
1/8 cup (= 2 tablespoons) oil
¼ cup water

Directions:
Directions:
Pour the flour into a bowl. It is not essential to sift.
Drizzle the oil onto the flour and stir in with a fork until it is well mixed.
Drizzle the water into the bowl and stir in with fork.
When the dough starts to thicken, knead it a few times by hand.

Shape the dough into a ball, then roll it out into a pie crust.
If the shape is irregular, just rim and patch pieces until it is round.

Spray or grease the pie pan lightly.
Put the crust in the pan and crinkle the top edge.
Poke holes in the bottom of the crust to keep it from rising up when baking.

Pour the filling into the crust.

This is a quick pie crust that is good for Spinach Pie. It is not flaky like a pastry crust, but it requires no resting time and can be made very quickly.
