2 10-ounce packages chopped frozen spinach
6 eggs
1 cup grated cheddar or Monterey jack cheese
¼ cup oil
1 teaspoon salt
¼ cup Dijon mustard

Directions:
Directions:
Thaw the spinach and squeeze out all the water.
Beat together the eggs, oil and salt.
Mix in the spinach.

Pour into a 9” diameter pie pan lined with a pie crust (try the Right Now Pie Crust recipe).
Spread the mustard over the top of the mixture.
Spread the cheese over the mustard.

Bake at 350 F for 45 minutes
