1 medium onion
1 1/2 C water
1/2 C tomato sauce
1 C uncooked white rice
2/3 C chopped green pepper
1 can (16oz) stewed tomatoes (Mexican style)
1 tsp chili powder
1/2 tsp oregano
1 1/4 tsp salt
1/4 tsp pepper

Directions:
Directions:
Bring water, onion, tomato sauce, stewed tomatoes, green pepper and seasonings to a boil. Add rice, bring back to a boil, cover, then simmer for about 30 minutes, or until rice is tender, stirring once or twice during cooking.

You can add sausage or hamburger to this, too--about 1/2 lb each or 1 lb of one or the other. If you add the meat, cook it with the onion beforehand and then add this to the boiling water with the rice.
