2 1/2 c. all purpose flour
1 T. baking powder
1/2 tsp. Salt
8 T. cold unsalted butter, cut up
1/4-1/3 c. sugar
2/3 c. milk

Directions:
Directions:
Heat oven to 425°. Put flour, baking powder & salt into large bowl; stir to mix well. Cut in butter w/pastry blender or rub w/your fingers until the mixture looks like fine granules. Add sugar; toss to mix. Add milk & stir w/a fork until a soft dough forms. Form into a ball, put onto a lightly floured board, & give 10-12 kneads.

Cut dough in half. Knead each half lightly into a ball & turn smooth side up. Pat or roll into a 6" circle. Cut each circle into 6-8 wedges. Place wedges on ungreased cookie sheet, slightly touching for soft sides. Bake about 12 minutes or until med. Brown on top. Put on a linen or towel on a wire rack & cover with another cloth. Cool completely.

I sometimes add almond extract & ground almonds to the dough (maybe 1/4-1/2 c.) AND drizzled with a glaze of milk, almond extract & powdered sugar.

You can also replace 1 1/2 c. of the flour with whole wheat flour.

Serve as is or with jam & cream.
