1-1/2 c cornmeal
1/2 c flour
1 tbsp baking powder
1 tsp salt
1/2 tsp baking soda
1/4 c vegetable oil
1-1/2 c buttermilk
1 egg

Directions:
Directions:
Preheat oven to 450º. If cooking in a cast iron pan (I use one shaped like corn) preheat your pan in the oven. It gives the cornbread a nice crunch on the outside. Blend together the cornmeal, flour, baking powder, salt and baking soda. Set aside. Combine the oil, buttermilk and egg together. Add dry mixture to wet mixture. Spray Pam in hot pan and then pour mixture into the hot pan and bake about 25 minutes. Remove cornbread from pan as soon as you remove it from the oven.
