1 ½ c. all purpose flour
¼ c. sugar
1 ½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1/3 c. orange juice
¼ c. margarine, melted
1 egg
1 (11-oz.) can mandarin orange segments, drained

1/3 c. flaked coconut
¼ c. sugar
1 tbl. Margarine, softend
1/2 tsp. grated orange peel

Directions:
Directions:
Preheat oven to 350 degrees.
In large bowl, combine flour, ¼ c. sugar, baking powder, baking soda, and salt.
In medium bowl, combine orange juice, melted margarine, and egg.
Add to flour mixture, just until moistened.
Gently stir in drained orange segments.
Spoon into greased or paper-lined muffin pans, filling each 2/3 full.
Bake at 375 degrees for 20 minutes.
