2 1/2 c sugar
3 c grated zucchini
2 tsp vanilla
1 cup salad oil
3 eggs
3 c flour
1/2 tsp baking powder
1 tsp baking soda
1 tsp each nutmeg and cloves
1 tsp salt
2 tbsp cinnamon
1 c chopped nuts

Directions:
Directions:
Add oil, sugar, zucchini and vanilla to well beaten eggs in large bowl. Mix well. Mix dry ingredients, except nuts, together and add to egg mixture. Blend well and stir in nuts. Bake at 375 for 40-45 minutes for three small pans, or 1 hour for two larger pans. Grease and flour pans well. One cup of raisins and be added and don't skimp on the spices.
