1 large navel orange, washed well
1 cup raisins (may be finely ground)
1 tsp baking soda
2 tbsp melted shortening
1 beaten egg
2 c flour
1/2 tsp salt
1 tsp baking powder
1 1/2 c chopped walnuts
1 tbsp vanilla

Directions:
Directions:
Squeeze juice from orange and add enough boiling water to make one cup. Grind remaining whole orange and add with raisins. Stir in baking soda, then sugar, shortening and vanilla. Add beaten egg, then flour, baking powder and salt. Mix thoroughly and stir in nuts. Pour into two large pans or several small ones. Bake 40 - 50 minutes at 350º. Cool before slicing. (Small pans will cook faster, use toothpick to test.)
