1 stick of butter
1 rib of celery chopped
1/2 medium bell pepper finely chopped
1 yellow onion chopped
1 10 oz. can Rotel diced tomatoes
1 can of cream of mushroom soup
1 8 oz. block Velvetta cheese cubed
1 lb. fresh or frozen crawfish tails
1/4 cup green onions chopped

Directions:
In a large skillet saute onion, bell peper and celery in butter over medium heat until wilted. Add Rotel tomatoes (including liquid) and reduce heat to low, cook for 20 - 30 minutes stirring occasionally. Add the cream of mushroom soup and blend with seasoning mixture. Cook for 20 minutes stirring often. Add the cubed Velveeta and stir until cheese is melted. Add the crawfish tails, green onions and pepper and cook for about 10 minutes.

You can subsitute shrimp for the crawfish.
Also for Crawfish or Shimp Pasta increase Rotel and Cream of Mushroom Soup to 1-1/2 cans and serve over you choice of pasta.
